Wow, these look incredible! One of my favourite treats as a non-vegan was Millionaire’s Shortbread and this looks like an awesome alternative! The only thing I will substitute when making these, is the honey in the chocolate topping – probably for agave or maple syrup.

These raw “twix” bars are giant nourishing versions of the cheeky chocolate treat.

Ingredients:

Bottom “biscuit” layer:
1 cup of cashews
1/4 cup of honey
Pinch of salt

Caramel layer:
100 grams of dates
4 tbsp of natural no added sugar or salt pure peanut butter
3 or 4 tbsp of water

Chocolate topping:
3 tbsp of honey
4 tbsp cacao powder
3 tbsp coconut oil
2 tbsp water

Method:

Put all of the bottom layer ingredients in a food processor and mix (a blender works too). Scoop into a baking tin and flatten.

Next process all of the caramel layer ingredients and smooth on top of the biscuit layer.

Refrigerate for about 15 minutes.

Melt the coconut oil in a saucepan and add the cacao and water. When cool stir through the honey and then pour chocolate later on top of caramel layer.
